Watermelon Smoothie

This refreshing smoothie has been served to me as breakfast all summer long.  I’ve awoken every morning to a tall, inviting glass of this drink (waiting for me on my nightstand!) prepared by my husband.  What a way to start the day!  Of course, everything tastes ten times better when someone else makes the meal and serves it to you.

My husband halves the watermelon and places it in the refrigerator to chill before use.  Another good tip: Use a stainless steel serving spoon to scoop out the watermelon pieces for this recipe.  It’s a lot easier than trying to cut it with a knife.


Ingredients (Serves 6)

3  cups seedless watermelon, chilled
1  large organic apple, seeded and quartered
1  large organic banana, peeled and halved
¼ teaspoon fresh ginger, peeled
2  tablespoons flaxseed meal
3  heaping tablespoons nonfat plain Greek yogurt


Place watermelon into the Vitamix, set machine on low (Variable 3), and blend for 20 seconds.  This should yield approximately 3 cups of juice in the container at this stage.

Place the rest of the ingredients in the Vitamix and blend on low, slowly increasing to a higher setting (Variable 10), then to HIGH.  Blend on HIGH for approximately 1 minute.  Serve immediately.

One of the best features of the Vitamix machine is the easy cleanup:  Simply fill the container half-way with warm water adding a drop of liquid dish soap. Turn machine on HIGH and let run for 1 minute; rinse with warm water and let dry before placing container back on its base.
