Eating
the required servings of vegetables in maintaining a good diet can be
challenging. Juicing them is much easier
when you’re pressed for time. A vegetable smoothie can also serve as a great
afternoon “pick-me-up” in between
meals. This is usually the time of day
my husband prepares his vegetable drink, or what he frequently refers to as liquid gold! I am always instructed to
drink it right away— when all the ingredients are
still “alive.”
Ingredients (Serves 5)
1 cup (packed) organic baby spinach, rinsed
6 stalks organic celery, halved and rinsed
2 cups orange juice
Place all the ingredients into the Vitamix, set machine on low (Variable 3), slowly increasing to a higher setting (Variable 10), then to HIGH. Blend on HIGH for approximately 1 minute. Serve immediately.
